I love to cook Mexican food-all kinds, am a whiz at Tamales and have them quite mastered!!! Some of my favs are Mole, Chile Rellenos and Sopes...I also love Italian food and cook just about any dish but my specialty is Eggplant Parmesan as well as the traditional Easter Wheat Pie.
