Chicken is a common meat in my family, so I love to brighten up my chicken dishes by cooking it a variety of different ways.

Funniest/Worst Cooking disasters

Just recently, I invited my father and his sister who live out of town over for dinner. I prepared salmon with a habanero lime-butter sauce, teriyaki chicken, yellow rice, collard/turnip greens, biscuits and a tossed mixed greens salad with a honey-dijon viniagrette dressing. Well, I had everything set on the table and I was just about to transfer the salmon from a cast iron skillet to a serving dish when I mindlessly grabbed the cast iron skillet right out of the oven with my bare hand! I was devoted to my main dish and didn't want to drop it, so I held on to it until I could get it secure on the counter. It left a mean scar! It took at least a week to just stop the burning sensation. I made sure to buy extra pot holders to keep on hand.

I am a young wife, mother of 2, and step mother of 4. I love to cook. Even though I work a 9-5, and have two children under 4, I still manage to make tasty gourmet style meals in under an hour that the family loves.
