Ingredients

  • 1 butter flavored cooking spray
  • 1 tablespoon frozen chopped onion
  • 2 button mushrooms, sliced
  • 1/2 cup chopped no-salt-added canned tomatoes, drain
  • 1 teaspoon capers
  • 1 cup egg substitute
  • 1/8 teaspoon garlic
  • 1/8 teaspoon hot pepper sauce

Cooking Instructions

Spray a microwave proof casserole dish with cooking spray. Cook the onion and mushroom, covered, for 1 minute on a high setting. Add the tomatoes and capers and cook for another 3 minutes on a high setting. Mix in the egg substitute, garlic powder, and hot pepper sauce.

Cook, uncovered, for 3 minutes on a medium setting.

Let sit for 2 minutes before serving.
