Ingredients

  • 1 medium acorn squash, halved and seeded
  • 1 tablespoon butter
  • 2 tablespoons brown sugar

Cooking Instructions

Preheat oven to 350 degrees F (175 degrees C).

Turn acorn squash upside down onto a cookie sheet. Bake in a 350 degrees F (175 degrees C) oven until it begins to soften, approximately 30 to 45 minutes.

Remove squash from the oven and turn onto a plate so that the flesh is facing upwards. Place butter and brown sugar into the squash, and place remaining squash over the other piece. Place squash in a baking dish (so the squash wont slide around too much) while baking.

Place squash in the 350 degrees F (175 degrees C) oven and bake another 30 minutes.

This is easy and very good.Try putting some chopped walnuts inside with butter,brownsugar,and nutmeg.WONDERFUL..........

SIMPLER PREPARATION OF ACORN SQUASH

FOR THOSE OF US WITH ARTHRITIS IN OUR HANDS, CUTTING A SQUASH IN HALF IS VERY PAINFUL AND DIFFICULT. I PIERCE THE SKIN ONCE AFTER WASHING WHOLE SQUASH, PLACE WHOLE SQUASH ON MICROWAVE PLATE, COOK FOR 12 MINUTES, TURNING OVER HALFWAY THRU COOKING TIME. MAKES REMOVING STRINGY SEEDS A BREEZE AND LEAVES SQUASH MORE MOIST. POKE THROUGH WITH FORK FOR TIME ALLOTMENT FOR DESIRED TENDERNESS.

Acorn Squash ala Madeline

I add a few sprinkles of Ginger or Nutmeg, depending on what I am serving the squash with. The spices inhance the flavor of the squash.
