METHOD:
Toast the bread until just lightly browned. In a bowl, combine the mayonnaise and goat cheese. Season with salt. Spread on the bottom half of each baguette. Layer with the salmon. Top with the tomato and onion, and season with salt.
In a bowl, toss the parsley with oil and vinegar and place on top of onion. Top with top half of baguette.
Round Out the Meal:
With sauteed garlic zucchini.
Kid Friendly:
Substitute ham for the smoked salmon.
