Mix together first 8 ingredients, If the mixture is too wet, Add a little more breadcrumbs. spray a pan with cooking spray, and make approximately 8-10 large meatballs. Add vegetables to the meatball mixture. Pour the Ground tomatos over all. Cover with foil and bake for 1 hour @ 350 f. Remove foil, top with asagio and bake another 15 minutes until melted. Serve with pasta or alone with bread.
This recipe is born from a need to cut back on eating red meat. The tomato paste gives these meatballs a family pleasing color! This is a relatively low-fat dish.
