Beat eggs, in large bowl with electric mixer at medium speed until very thinck and light.
Gradually beat in sugar. Continue beating for 20 minutes.
On low speed, beat in flour, baking powder, salt and beat for 1 minute.
Add anise extract and beat just until blended.
Greast and flour 3 Cookie Sheets.
Drop dough mixture by teaspoonfuls 1/2 inch apart on prepared cookie sheets.
Swirl each cookie to make into a circle. Let stand at room temperature uncovered 8 hours or overnight.
Preheat oven to 325 degrees.
Bake cookies about 10 minutes or until smooth and firm.
Cool on wire rack for 5 minutes
Dough needs to sit for 8 hours or overnight
