Apple and Cream Cheese Roll-Ups

Ingredients

  • 1 cup apples, dried, chopped
  • 3 oz unsweetened apple juice frozen concentrate, undiluted (1/3 cup)
  • 3/4 tsp ground cinnamon, divided
  • 1 pinch ground nutmeg
  • 1/4 cup Splenda granular
  • 1/4 cup low fat cream cheese (2 ounces)
  • 1 egg, large, raw
  • 12 phyllo pastry dough sheet, thawed
  • 1 can cooking spray
  • 1/2 cup Cracker Crumbs, graham, plain, divided

Cooking Instructions

1 Heat apples, apple juice concentrate, cinnamon, and nutmeg in a pot over medium-high heat until it boils.

2 Lower heat, place lid on pot, and simmer 5 minutes until almost all the liquid is absorbed. Let mixture cool to room temperature.

3 Using an electric mixer, beat Splenda and cream cheese until fluffy. Beat in egg. Gently fold apple mixture into cream cheese, cover, and reserve.

4 Preheat oven to 350 degrees F. Spray a baking sheet with nonstick cooking spray and set aside.

5 Lay one sheet of phyllo on a large flat surface, with the remaining sheets covered so they do not dry out. Coat phyllo with cooking spray and top with 2 teaspoons graham cracker crumbs.

6 Continue layering each sheet of phyllo with cooking spray and cracker crumbs until all the sheets are used.

7 Slice each phyllo into 6 separate 3/4-inch wide strips. Spoon 1 teaspoon of apple mixture onto the end of one end of each phyllo strip.

8 Roll each strip to cover apple mixture, forming triangles. Arrange seam-side down on a cooking-spray-coated baking sheet.

9 Sprinkle each apple triangle with cinnamon. Bake 10 minutes. Let cool.
