Apple-Lemon Bread Pudding

Ingredients

  • 1 can (21 oz) apple pie filling or topping
  • 1 loaf (about lb) challah bread, cut in 6 teen /2-in.-thick slices
  • 3 oz each) cook & serve vanilla pudding and pie filling
  • 1 qt (4 cups) whole milk
  • 2 Tbsp lemon zest
  • 3/4 cup Goldens and Cherries (mix of golden raisins and dried cherries from a 6-oz pouch)
  • 3/4 cup golden raisins
  • Garnish: confectioners’ sugar

Cooking Instructions

Heat oven to 350°F. Have a 13 x 9-in. or 3-qt shallow baking dish ready.

Spread apple pie filling in baking dish. Layer bread in a single layer on top, overlapping slices shingle-fashion. Whisk pudding mix and milk in a large bowl 2 minutes. Stir in lemon zest and Goldens and Cherries. Pour over bread, pressing bread down so it’s completely saturated.

Bake 50 minutes, or until a knife inserted in center comes out clean.

Sprinkle with confectioners’ sugar. Serve warm or at room temperature.

Good with: Vanilla-Rum Sauce (recipe follows)

Vanilla-Rum Sauce

Stir 1 Tbsp rum and 1/4 tsp ground nutmeg into 1 cup melted vanilla ice cream. Makes 1 cup.
