Apricot-Almond Chicken

Ingredients

  • 1 orange
  • 2 Tbsp flour mixed with
  • 3/4 tsp ground cinnamon
  • 1/4 tsp each salt and pepper
  • 12 oz chicken tenders
  • 2 tsp canola oil
  • 1 small red onion, chopped
  • 1 can (14 1/2 oz) fat-free, reduced-sodium chicken broth
  • 1 cup dried apricots
  • 2 Tbsp apricot preserves
  • 1/2 cup toasted almonds
  • 2 lb fresh spinach
  • 1 lb cut up red-skinned potatoes, both steamed

Cooking Instructions

Grate 1 tsp peel and squeeze 1/4 cup juice from orange. Put flour mixture in a bag, add chicken and toss to coat.

Heat oil in a medium nonstick skillet. Add chicken and onion; cook until browned and chicken is cooked through. Remove chicken to a plate.

Add remaining ingredients except almonds, spinach and potatoes. Cover and simmer 10 minutes until apricots are soft. Return chicken; heat through. Sprinkle with almonds. Serve with spinach and potatoes.
