1. Peel the brown skin off of the yuca. Grate the yuca. Squeeze the excess water from the yuca and then place it into a large mixing bowl.
2. Chop the onions and cilantro and grate both the peppers and add to the mixing bowl.
3. Add the egg and salt and mix all ingredients.
4. In large frying pan, heat oil on medium heat. Test fry one "arepita": using a spoon and your hand, scoop about a table spoon size of the mixture, pack it together and place it in the pan. Let it crisp golden brown for about 4 minutes on the first side, 2-3 minutes on the other side. If needed, adjust temperature and begin placing arepitas around the pan.
5. Remove and enjoy! *This may be served with katsup.
This is a Dominican dish I learned to cook in "el campo" (the countryside) of a town in the Dominican Republic called Los Dajaos. It is one of my favorite dishes and ALWAYS gets great reviews!
