METHOD:
In a bowl, cover the noodles with hot water for 10 minutes, until they are soft. Drain and add 2 Tablespoons oil, coating the noodles.
Heat the remaining oil in a skillet and quickly pan fry the prawns for 1 minute on each side. Remove and set aside. Add the broccoli rabe and garlic. Saute until tender, yet crunchy, about 5 minutes. Add the crushed tomato, fish sauce, and softened noodles. Serve with the prawns and sprinkle with the cilantro and chili flakes.
Round Out the Meal:
With spring rolls.
Kid Friendly:
Omit the chili flakes and fish sauce.
