Asian Shrimp & Noodle Soup

Ingredients

  • 8 cups water
  • 4 packages (about 3 ounces each) any flavor ramen noodle soup with seasoning packets
  • 12 oz frozen, cooked, peeled and deveined medium shrimp (4 cups)
  • 1 tsp dark Oriental sesame oil
  • 1/4 tsp crushed red pepper
  • 1/2 cup chopped scallions
  • 1/3 cup grated carrots
  • 4 lime wedges

Cooking Instructions

Bring water to a boil in a 3- to 4-quart pot. Break up noodles, add to pot and cook 3 minutes, stirring occasionally, or until tender.

Remove from heat. Immediately stir in shrimp, seasoning packets, oil and crushed pepper. Let stand 1 minute. Sprinkle scallions and carrots over top. Serve with lime wedges on the side.
