Asian Tomato Salsa

Ingredients

  • 2 medium tomatoes (chopped)
  • 1/2 of English cucumber (diced)
  • 2 whole scallions (sliced)
  • 1/4 cup chopped fresh mint
  • 2 small jalapenos (finely chopped)
  • 2 tablespoons rice vinegar
  • 2 teaspoons soy sauce
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons sesame seeds

Cooking Instructions

This salsa is a must when serving an Asian dinner and compliments seared tuna grilled shrimp salmon and chicken.

Combine salsa ingredients in a medium bowl; season with salt and pepper to taste.

This salsa is best served room temperature.

Refrigerating tomatoes can easily change their flavor and texture.

Makes 2 1/2 cups.
