This salsa is a perfect compliment to grilled seafood pork or chicken. I usually create a simple rub of brown sugar ancho chili powder and a little cumin for my grilled items.
Combine ingredients in a small bowl; season to taste with salt and pepper.
Serve with grilled seafood chicken or pork.
Makes 3 cups.
