Awesome Mac & Cheese

Ingredients

  • 3/4 lb. Elbow Macaroni
  • 1 1/2 c Heavy Cream
  • 1 c Half & Half
  • 1 c Whole Milk
  • 2 Eggs
  • 1/2 tsp. Freshly Grated Nurmeg
  • 1/2 tbsp. Kosher Salt
  • 1/4 tsp. Pepper
  • 1 1/2 c Shredded Extra-Sharp Cheddar Cheese
  • 1 1/2 c Shredded Sharp Cheddar Cheese
  • 1 1/2 c Shredded Monterey Jack Cheese
  • 4 oz. Cold Cream Cheese - Cut into 1/2" Cubes

Cooking Instructions

Preheat oven to 350 degrees. Cook macaroni in large pot of salted boiling water for 3 minutes. Drain the macaroni and return to pot. Drizzle lightly with olive oil and toss.

Butter a 10 by 15" baking dish. In a large bowl whisk the heavy cream with the half & half, milk, eggs, nutmeg, salt and pepper. Stir in cheeses and macaroni. Spread the mac and cheese in the baking dish and scatter the cream cheese cubes on top.

Bake the macaroni for 5 minutes. Spread the melted cream cheese cubes evenly over the top. Bake for 40 minutes, until it bubbles.

Remove the dish and preheat broiler. Broil the mac and cheese about 3 inches from the heat until brown, about 2 minutes. Let stand for at least 10 - 20 minutes before serving.
