In a large mixing bowl, combine the meat, bread crumbs, eggs, onion soup mix, 1/2 cup ketchup, 2 T. mustard, 1 T. Worcestershire sauce, and salt and pepper to taste by hand until well blended.
Line a 13x9x2 pan with overlapping uncooked bacon and spoon meatloaf mixture onto the slices. Make a loaf shape out of the mixture, creating a deep well in the center. Put entire block of cheese in well and form meatloaf around the cheese, making sure to pack it firmly and seal any cracks tightly.
Wrap ends of bacon slices up around meatloaf and bake at 350 degrees for approximately 45 minutes.
In a separate bowl, combine remaining ketchup, mustard, and Worcestershire sauce. Spoon over meatloaf after 45 minutes and put back in the oven to cook an additional 15 minutes or until an internal temp of 165 degrees has been achieved (make sure to register in the meat, not the melted cheese).
Allow to sit for 10-15 minutes to allow cheese to firm slightly before slicing.
Not the healthiest recipe in the bunch, but every once in a while, you just need some comfort food. I suggest serving this with mashed potatoes, English peas, and whole wheat rolls.
