Bacon, Spinach, Peas and Romano Cheese

Ingredients

  • 1 bag Spinach
  • 1 pint Shelled Fresh Peas or Frozen
  • 4 Slices Bacon (chopped)
  • 3 Cloves Garlic (Minced)
  • 2 Shallots
  • 1 Lemon
  • 2 Tablespoons Grated Romano Cheese

Cooking Instructions

Wash clean your Spinach and dry completely. If you are using frozen peas defrost and try to get out as much moisture as possible.

Fry your bacon in a pan over medium heat. Remove the bacon from the pan reserving the drippings. Add your peas, followed by the shallots and garlic. Season with salt and pepper.

Toss in your Spinach and have it wilt. Squeeze in juice from half a lemon and sprinkle with the cheese. Serve hot.
