1. Wash and pick over the beans. Place them in a bowl with water to cover and let them soak overnight. Drain and rinse the beans and place them in a large pot with the water. Bring to a boil, cover, reduce the heat, and simmer, stirring occasionally, until they are very tender (1 hour or longer).
2. While the beans are cooking, heat the olive oil in a skillet. Add the onion and the garlic, and saute over low heat for at least 30 minutes or until the onion is very tender. The long, slow cooking of the onion is what brings out its sweetness.
3. Add the sauteed onion and the remaining ingredients to the beans. Mix well. Place in a well-oiled baking dish. Cover and bake at 350F for 20 - 25 minutes.
