Baked Codfish with Potatoes

Ingredients

  • 3 tablespoons olive oil
  • 1 pound thin-skinned potatoes, sliced thin (about 3 cups)
  • 1 medium-size onion, sliced thin
  • 1 jar (2 ounces) chopped pimientos, drained
  • 1/2 teaspoon dried rosemary leaves, crumbled
  • 1/2 teaspoon salt
  • 1 pound codfish fillet, about 3/4-inch thick, cut in 4 pieces
  • 1 tablespoon packaged seasoned bread crumbs
  • 1 tablespoon grated Parmesan cheese

Cooking Instructions

Place oven rack in lowest position. Heat oven to 450°F.

In a large ovenproof skillet or range-top-to-oven baking dish, heat oil over medium heat. Add potatoes and onion, stirring to coat. Reduce heat to medium-low and cook, stirring occasionally, 10 minutes or until potatoes and onions start to brown and are barely tender. Stir in pimientos, rosemary and salt. Arrange fish over potatoes.

Mix bread crumbs and cheese in a small bowl. Sprinkle over top.

Bake 10 to 12 minutes, or until fish is opaque at its thickest part when tested with a fork. Serve right away.

This traditional dish will please just about everyone—especially kids. If cod is unavailable, you can use other lean white fish fillets such as scrod, bass or flounder.
