Baked Fish, Yucatan Style

Ingredients

  • Juice of 1 lemon
  • Juice of 1 orange
  • 4 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 tomatoes, chopped
  • 2 jalapeño peppers, seeded and chopped
  • 1/2 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1 tbsp capers
  • 1/2 cup water
  • Salt to taste
  • pepper to taste
  • 1 3- to 4-pound fish (try snapper, sea bass or salmon), eviscerated, head and fins left on

Cooking Instructions

Puree all ingredients (except the fish if you please), pour into a baking dish, add the fish, and marinate for about 1 hour.

Before the marinating time is up, preheat the oven to 375F.

Bake the fish in the marinade in preheated oven for about 10 minutes per lb of fish.
