Clean potatos and chop into cubes. Place in sauce pan and cover with chicken broth. Boil until fork tender and drain. Saute chopped bacon until cooked thru and drain off fat. Add to potatos and add 1/2 cube butter sour cream cream cheese 1 cup of the shredded cheese salt pepper and green onion. Mash slightly leaving chunks. Season to taste and place in greased baking dish. Dot with remaining butter and sprinkle with remaining cheese. Cover and bake at 350 degrees for 45 minutes.
This recipe is great with grilled ribeye steaks, caesar salad and chocolate chiffon pie for dessert!
