Ingredients

  • 6-8 Yukon Gold Potatos medium to large cut into chunks
  • 1 Box Organic Chicken Broth
  • 1 8 oz package Cream Cheese
  • 1/2 cup Sour Cream
  • 1 bunch Green onions chopped green parts only
  • 10 slices Platter bacon chopped
  • 2 cups Shredded Sharp Cheddar Cheese
  • 1 T Kosher Salt
  • 1/2 Tsp. Fresh Ground Pepper
  • 1 cube Butter divided

Cooking Instructions

Clean potatos and chop into cubes. Place in sauce pan and cover with chicken broth. Boil until fork tender and drain. Saute chopped bacon until cooked thru and drain off fat. Add to potatos and add 1/2 cube butter sour cream cream cheese 1 cup of the shredded cheese salt pepper and green onion. Mash slightly leaving chunks. Season to taste and place in greased baking dish. Dot with remaining butter and sprinkle with remaining cheese. Cover and bake at 350 degrees for 45 minutes.

Recipe Notes

This recipe is great with grilled ribeye steaks, caesar salad and chocolate chiffon pie for dessert!
