Prepare the potatoes and keep warm.
In a large bowl, combine the onion, garlic, and bell peppers. Add the mashed potatoes while they are as hot as possible, along with all of the remaining ingredients. Mix well. Allow the spices to blend for 15 minutes.
Serve with a dal and chapatis.
