In choosing potatoes for baking, select those of uniform size and shape. Scrub well and dry. Rub with any desired fat. Place in a preheated hot oven (400F) and bake until tender when pressed with a finger, about 1 hour. Cut a 2-inch cross at the center broadside top. Press toward the center with both hands and the skin will burst open, allowing steam to escape. Serve buttered. Or top with grated cheese, sour cream, or cottage cheese, and sprinkle with chopped chives, parsley, or other fresh herbs.
