Baked Rice Provencal

Ingredients

  • 1-1/2 cups short grain brown rice
  • 1-1/4 cups chopped onions (1-1/2 medium onions)
  • 1 tsp basil
  • 1 tsp oregano
  • 1/2 tsp sea salt
  • 1 tbsp vegetable broth powder
  • 3 cups water
  • 2 medium tomatoes, sliced
  • 3 cloves garlic, pressed
  • 1 tbsp olive oil

Cooking Instructions

1. Place the rice and the onions in a lightly oiled baking dish. In a medium bowl, combine the basil, oregano, salt, vegetable broth powder, and water. Mix well and pour over the rice. Stir and cover.

2. Bake the rice at 350F for 1 hour.

3. Uncover the rice and top it with the tomatoes. In a small bowl, combine the olive oil and the garlic. Brush this mixture over the tomatoes. Cover. Return the mixture to the oven and bake for 15 minutes more.

4. Serve with bean and vegetable dishes.
