Baked Salmon Fillet with Tomatoes and ..

Ingredients

  • 3 Tbsp. extra virgin olive oil - divided
  • 1 Tbsp. freshly squeezed lemon juice
  • 1 lb. salmon fillet - with skin or with skin removed
  • 1/2 tsp. kosher salt
  • freshly ground black pepper to taste
  • 1 clove fresh garlic - crushed
  • 2 - 3 plum tomatoes
  • 1 Tbsp. capers

Cooking Instructions

Preheat oven to 375 degrees. Pour 2 Tbsp. olive oil into bottom of baking dish.

Wash salmon fillet with cold water and pat dry with paper towels. place fish skin-side down in bottom of baking dish. Sprinkle with fresh lemon juice. Brush with remaining Tbsp. of olive oil. Sprinkle with salt and fresh-ground black pepper.

Using garlic press crush garlic clove and spread evenly over fillet. If you don't have a press finely chopped garlic or thinly-sliced garlic works just as well.

Slice plum tomatoes into approx. 1/4 inch thick slices and arrange on top of fillet to cover. Sprinkle with capers. Bake salmon for 30 minutes.

Recipe Notes

Pairs well with my Baby Spinach Salad Recipe, and a dry, crisp white wine, such as Pinot Grigio or a dry French Chardonnay.)

Easy Gourmet Salmon

Great taste, very nice blend of flavors . Very light, gourmet looking and gourmet tasting. With the plum tomatoes and the capers, it is a very attractive looking entree. My husband was so pleased when he looked at the plate, he thought it was a special occasion. When he tasted it he was delighted as well. Thank so much for sharing this recipe.
