Heat oven to 300 degrees. Grease a 8-by-12 baking dish.
Steam the spinach just to wilt. Drain well, chop and set aside. Melt the butter in a nonstick pan over med.-high heat and saute the garlic, onion, and bell pepper until tender.
In a large bowl, combine cheeses, milk, eggs, salt & pepper. Stir in Spinach and sauteed vegetables, mixing well. Pour into prepared pan and sprinkle with bread crumbs.
Bake 30 min.
This is the YUMMIEST Baked Spinach I have ever eaten. My husband agrees with me.......
