Ingredients

  • 2 LBS Fresh Spinach
  • 1/2 TSP Butter
  • 1/2 TSP Garlic/finely chopped
  • 1/2 CUP White Onion/diced
  • 3 OZ. Red Pepper/diced
  • 4 OZ. Gruyere Cheese/shredded
  • 3 OZ. Parmesan Cheese/grated
  • 1/2 CUP Whole Milk
  • 1 Egg
  • Dash Salt & Pepper/to taste
  • 1/4 CUP French Bread Crumbs

Cooking Instructions

Heat oven to 300 degrees. Grease a 8-by-12 baking dish.

Steam the spinach just to wilt. Drain well, chop and set aside. Melt the butter in a nonstick pan over med.-high heat and saute the garlic, onion, and bell pepper until tender.

In a large bowl, combine cheeses, milk, eggs, salt & pepper. Stir in Spinach and sauteed vegetables, mixing well. Pour into prepared pan and sprinkle with bread crumbs.

Bake 30 min.

This is the YUMMIEST Baked Spinach I have ever eaten. My husband agrees with me.......
