Baked Tofu in Thai Spice

Ingredients

  • 2 cakes firm tofu (12 to 14 ounces)
  • 1/4 cup Thai curry paste
  • 3 tablespoons soy sauce

Cooking Instructions

Preheat the oven to 350 degrees F.

Press the tofu between two plates for at least 30 minutes.

Prepare an 8 x 12-inch baking dish with cooking spray or a very light coating of oil. Cut each tofu cake into three slices about 1/2 inch thick. Stack the slices and then cut two diagonals (making an X) through all six layers. This will make 24 triangular pieces of tofu.

In the baking dish, gently toss tofu with the curry paste and soy sauce. Bake for 45 minutes, stirring gently twice during the baking.
