Remove sausage from casings and crumble
Place sausage garlic and onion in hot skillet with 3 T olive oil
Saute until onion is translucent and sausage is cooked
Drain excess liquid and place in saucepan.
Add next 8 ingrediants and bring to a boil
Cover and simmer for 15 minutes
Add parmesan and simmer additional 15 minutes. Remove 1 cup of sauce to later.
Boil pasta according to package directions
Drain and toss with sauce
Mix ricotta with beaten eggs and 1/2 cup grated parmesan
Layer pasta as follows: pasta and sauce ricotta sliced velveeta shredded cheese and repeat.
Top with remaining sauce grated paremsan and remaining shredded cheese.
Cover and bake at 350 degrees for 45 minutes or until bubbling and cheeses are melted.

03/30/08 09:23 PM | A nice alternative to traditional pasta dishes!What a wonderful, cheesey, yummy piece of heaven! You can substitute low or non-fat varieties of cheese in this recipe and still have the richness and great flavors! Serve along side a chopped green salad and warm french bread. |
