Ingredients

  • 1 cup shortening
  • 1 cup sugar
  • 2 eggs (beaten)
  • 2 cups flour
  • 1 tsp soda (level)
  • 3 crushed bananas
  • 1/2 cup chopped walnuts (optional)
  • 1 tsp vanilla
  • 1/2 tsp salt

Cooking Instructions

Cream sugar and shortening, add eggs, mix well, add soda, salt, and flour. Mix well. Fold in bananas, walnuts, vanilla. Placein greased and floured 9x5 loaf pan. Bake 350for about 1hr 15min or until toothpick comes out clean.

I like to sift dry ingredients but its not nessasary

Optional walnuts

My friend has diverticulitis and cannot have nuts. I substituted Grape Nut cereal instead... worked like a charm. The ceral stays crunchy and of course tastes like nuts! Just thought I'd pass this along. :)
