Banana Cake

Ingredients

  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 c. mashed ripe bananas (about 2 medium bananas)
  • 1/3 c. safflower oil
  • 1 egg, slightly beaten with a fork
  • 1 tbsp vinegar
  • 1 tsp vanilla
  • 1/4 c. liquid corn oil margarine
  • 1 c. confectioners' sugar
  • 1 tsp lemon juice
  • 1 small banana, sliced and placed in a small bowl with 1 tbsp lemon juice and 1 tsp sugar (to prevent darkening)
  • 1/4 c. cornstarch
  • 2/3 c. sugar
  • 1-1/4 c. whole wheat flour

Cooking Instructions

1. In an 8-inch or 9-inch square pan, thoroughly mix flour, sugar, cornstarch, baking soda, and salt. Add remaining ingredients except frosting and blend well.

2. Bake at 350 for 30 to 35 minutes or until a toothpick inserted comes out clean. Cool in the pan on a rack.

3. To make the frosting, cream margarine, confectioners' sugar and lemon juice together in a small bowl. In another bowl, combine sliced bananas with the lemon juice and sugar.

4. After the cake has cooled, spread with frosting and top with banana slices.
