Banana Crunch Cake

Ingredients

  • 1 Cup All-Purpose Flour
  • 1/2 Cup Brown Sugar (packed)
  • 6 Tbsp Butter (unsalted) - cut into pieces
  • 1/2 Cup Pecans (chopped)
  • 3 Cups All-Purpose Flour
  • 1.5 tsp Cinnamon (ground)
  • 1.5 tsp Salt
  • 1 tsp Baking Soda
  • 1.5 Cup Sugar
  • 1.5 Cups Bananas (mashed) (about 4)
  • 1 Cup Oil
  • 3 Eggs
  • 1/4 Cup Buttermilk
  • 2 tsp. Vanilla
  • 1 Cup Pecans (Chopped)
  • Confectioners Sugar (for garnish)

Cooking Instructions

1. Preheat Oven to 350.

2. Coat 9 x 13 dish with cooking spray.

3. Topping: In bowl, combine flour (1st ingredient) and brown sugar. Cut butter into mixture with pastry blender, until mixture resembles fine crumbs. Stir in pecans (if using) and set aside.

4. Cake: In a large bowl, mix flour (2nd occurence), cinnamon, salt and baking soda. In separate bowl beat together, at medium speed, sugar, mashed bananas, oil, eggs, buttermilk and vanilla until blended, 1 to 2 minutes. On low speed, gradually add flour mixture until blended. Stir in pecans. Pour into prepared pan.

5. Crumble crunch topping evenly over top.

6. Bake at 350 for 50 - 55 minutes, until wooden toothpick tests clean.

7. Let cake cool in pan on rack.

8. Sprinkle with confectioners sugar prior to serving.

Refrigerate covered, up to 3 days.

Enjoyed

I do have to disagree with the prep time of 15 minutes. However, I am disabled, so that might have something to do with it. With the toppings in recipe, I think this is more like a coffee cake type recipe. However, I'm sure you can leave toppings off and frost if you wish.
