Ingredients

  • 1-2 large bananas, mashed
  • 1 egg white
  • 1 tablespoon smart sugar
  • 1/4 teaspoon bicarbonate of soda
  • 3 tablespoons applesauce
  • 1 cup self-raising flour
  • 2 tablespoons water

Cooking Instructions

Begin by preheating your oven to 350 degrees F and spray 2 muffin tins with non-stick cooking spray.

In a medium-sized bowl, beat the egg white and sugar until fluffy and then stir in the mashed banana. In a separate bowl, add the bicarbonate of soda to the applesauce, let if froth for a minute, and then add it to the banana mixture.

Gently fold in flour to banana mixture, add water and mix.

To bake, pour the batter equally in the muffin tins and cook for 15 to 20 minutes, or until a toothpick inserted into the center or muffin comes out clean. Instead of pouring the batter directly into the trays, try using cupcake-style liners for more decorative muffins.

For diabetics?

The amount of sugar is not listed. Bananas and applesauce have sugar in it. So not really for diabetics. Sounds delicious though, and less calories than storebought.
