Barbecued-Beef Potato Topper

Ingredients

  • 1 teaspoon vegetable oil
  • 11/2 cups very coarsely chopped green bell pepper
  • 1 cup thinly sliced onion
  • 1 cup (8 ounces) ground beef
  • 1 can (15 ounces) tomato sauce
  • 1/3 cup bottled barbecue sauce
  • 1 can (15 1/4 ounces) whole-kernel corn, drained

Cooking Instructions

Heat oil in a large nonstick skillet. Stir in green pepper and onion. Cook 2 to 3

minutes, stirring often, until onions are limp.

Add beef and cook 4 to 5 minutes, breaking up meat with a spoon, until meat is no longer pink.

Stir in remaining ingredients, reduce heat, cover and simmer 6 to 8 minutes until flavors are blended.
