Rub 1 small tender young fryer with garlic, salt, and pepper. Arrange 3 large coarse cabbage leaves, one overlapping the other, and place whole chicken in this nest. Put 1/4 cup chopped onion and 1/4 cup barbecue sauce in cavity. Brush carcass with barbecue sauce and cover with chopped onion. Cross breast with 2 strips of bacon. Wrap in two layers of cabbage leaves and tie with strong white string. Allow two persons per chicken. Place over low fire in pit and cook for at least 6 - 7 hours. Baste the balls of cabbage frequently with the following sauce, keeping leaves pretty wet, and turn the balls over every half hour or so.
