Steps:
1. Cook Barilla Tortellini according to directions on package.
2. Meanwhile, sauté onion and carrots in oil for 2 minutes in a large skillet over medium heat.
3. Add zucchini and eggplant; cook for additional 2 minutes.
4. Drain Tortellini and mix with vegetable combination in skillet.
5. Stir in tomatoes and serve.
Tip:
*Substitute fresh marjoram with ¼ teaspoon dried marjoram.
