Ingredients

  • ½ box (8 ounces) Barilla Gemelli pasta
  • 2 tablespoons pine nuts
  • 2 tablespoons extra virgin olive oil
  • 1 garlic clove, minced
  • 1 medium zucchini, cut into julienne strips
  • 2 medium carrots, cut into julienne strips
  • ½ cup freshly grated Parmigiano-Reggiano cheese
  • ½ teaspoon salt
  • 1/8 teaspoon ground black pepper

Cooking Instructions

Steps:

1. Toast pine nuts in large skillet over medium heat 4 to 5 minutes or until golden brown. Remove from skillet; set aside.

2. Heat oil in skillet over medium-high heat. Stir in garlic; cook 30 seconds. Add zucchini and carrots; sauté 6 to 7 minutes or until crisp-tender. Stir in pine nuts; remove from heat.

3. Meanwhile, cook Barilla Gemelli according to package directions; drain and return to pot.

4. Add cooked vegetable mixture and remaining ingredients to hot Gemelli; toss. Transfer to serving platter.

TIP:

*Substitute freshly grated Parmesan cheese for Parmigiano-Reggiano cheese.

*For a spicy flavor, add crushed red pepper flakes with seasoning.

*Purchased shredded carrots may be substituted for julienne strips.
