Ingredients

  • ½ box Barilla PLUS Spaghetti
  • 1 cup (1 small) zucchini
  • 1 cup (1 medium) red bell pepper
  • 1/3 cup extra virgin olive oil, divided
  • 1 clove garlic, minced
  • 2 fillets anchovies in olive oil (optional)
  • salt (to taste)
  • crushed red chili pepper (to taste)
  • 1 cup (1/2 pint) cherry tomatoes
  • ¼ cup fresh basil, packed
  • 2 cups broccoli florets
  • ½ cup Parmigiano Reggiano cheese, shaved

Cooking Instructions

Steps:

1. Julienne zucchini and bell pepper.

2. Heat half of the olive oil in a large skillet. Add garlic and sauté until golden.

3. Add pepper and cook for 2 minutes. (OPTIONAL: Add anchovies and let melt.)

4. Add zucchini and cook 3 minutes. Season with salt and red pepper.

5. Add cherry tomatoes.

6. Process basil and remaining olive oil in a blender. Season with salt and pepper; set aside.

7. Cook BARILLA PLUS Spaghetti pasta according to package directions. Add broccoli florets for the last 3 minutes of cooking. Drain.

8. Add pasta to skillet and mix well.

9. Drizzle with basil olive oil. Top with shaved Parmigiano cheese.
