Barilla® Whole Grain Penne with Zucchini and Parmesan

Ingredients

  • 1 box BARILLA Whole Grain Penne
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, chopped
  • 4 small zucchini, sliced thin
  • sea salt (to taste)
  • 2 cups cherry tomatoes
  • 4 leaves basil
  • ½ cup Parmesan cheese shavings

Cooking Instructions

Steps:

1. Season zucchini with a little sea salt and let drain for a half hour in a colander.

2. Bring a large pot of water to a boil.

3. Heat a medium sized skillet on medium-high heat; add oil to pan.

4. Add garlic and sauté, do not brown garlic.

5. Add zucchini and sauté for two minutes.

6. Add cherry tomatoes and sauté until skins are slightly blistered and the tomatoes are warmed all the way through. Tear basil into small pieces and toss with the sauce.

7. Cook pasta according to directions and toss with the sauce. Top with the cheese before serving.
