Basic Chicken Saute with Honey-Orange ..

Ingredients

  • 2 Tbsp flour
  • 1/4 tsp salt
  • 4 boneless, skinless chicken-breast halves (about 5 oz each), tenderloin (also called a tender or fillet) removed
  • 2 tsp oil, preferably canola
  • 1 tsp freshly grated orange peel
  • 1/2 cup fresh orange juice
  • 1/2 cup canned 99% fat-free chicken broth
  • 1 Tbsp honey
  • 1 tsp minced garlic
  • 1/4 cup chopped parsley

Cooking Instructions

Mix flour and salt in a plastic food bag. Add chicken, close bag and shake to coat evenly.

Heat oil in a large nonstick skillet over medium-high heat. Add chicken and cook, turning once, 5 minutes or until golden and opaque near center. Remove to a serving plate.

While chicken cooks, prepare sauce. Honey-Orange Sauce:

Add orange peel, juice, broth, honey and garlic to skillet. Boil gently 4 minutes or until slightly thickened.

Stir in parsley; spoon over chicken.
