  • 1-1/2 lbs sweet potatoes (3 to 4, about 7 oz each), sliced;

Cooking Instructions

Peel sweet potatoes. Cut across on the diagonal into 1/4-inch-thick slices. Place sweet potato slices in smallest pan that will hold them comfortably in a single layer. Slick slices and pan with 2-1/2 tablespoons fat. Place 1 rack in center of the oven and another on the second level from the bottom. Roast on center rack of 500F oven for 25 minutes. Remove pan and turn each slice. Return pan to lower rack of oven, back to front. Roast 25 minutes more.
