In a bowl, mix the olive oil with the herbs, salt, and pepper. Rub the oil and herb mixture equally on the tops and bottoms of the salmon and wrap each with Prosciutto, using approximately 4 slices per piece of salmon.
Bake at 325 degrees for 20 minutes. Since the salmon is smoked, it doesn’t require actual cooking, but you want to heat everything through and allow the flavors to blend.
Allow to cool, then carefully slice into thin pieces. This dish is very rich, which makes it the perfect accompaniment to pasta dishes or salads, though I usually serve it as an appetizer.
