BBQ Salmon with Pineapple

Ingredients

  • 1 tbsp olive oil
  • 1/4 cup canned, crushed pineapple with its juice
  • 2 tbsp tomato paste
  • 1 tbsp molasses or 2 tsp brown sugar or Sucanat
  • 1 tsp prepared mustard
  • 1 heaping tsp chili powder
  • 1/2 tsp cumin powder
  • Salt and pepper to taste
  • Few dashes Tabasco sauce
  • 1-pound fresh salmon filet, skin and bones removed, cut into chunks
  • 2 cups fresh pineapple, cut into bite-sized chunks (half the size of the salmon chunks)

Cooking Instructions

Combine all ingredients except the salmon and fresh pineapple in a large bowl and mix well. Add the salmon and pineapple and let marinate for 30 minutes. Skewer, alternating between salmon and pineapple (or red bell pepper) and grill over high heat for 2 to 3 minutes on each side.
