BBQ Sloppy Joe Bake

Ingredients

  • 2 cups Frozen pepper stir fry mix
  • l lb Ground beef
  • can Sloppy Joe BBQstyle sauce l5oz(Manwich)
  • l box Jiffy cornbread muffin mix box
  • l Egg-

Cooking Instructions

Preheat oven to 400. Coat a baking dish with non stick spray.

Heat a skillet over med heat and brown beef. 4-5 mins. Drain off fat.

Add one and half cups ( l l/2c) frozen stir fry veggies and cook with browned meat for an additional 3-4 mins.

Stir the BBQ sloppy joe sauce into pan and cook an additional 3 mins till thickened. (the original recipe calls for adding in reg Manwich sauce and one quarter cup ( l/4)BBQ sauce.

I found it was too wet to our liking and just added the bbq flavored Manwich instead) Transfer meat and veggie mixture to prepared baking dish.

In a bowl mix muffin mix egg and one third (l/3)cup water until blended. Pour onto meat mixture and add the remaining vegetable stirfry mix. Bake 20-25 mins until cornbread is golden brown. My kids LOVE this for a different take on sloppy joes.
