Becky's Shrimp in Spinach Leaves

Ingredients

  • About 20 fresh large spinach leaves, washed
  • One (3-ounce) package cream cheese, room temperature
  • 1/4 lb cooked bay shrimp, coarsely chopped
  • 1 tbsp fresh cilantro, minced
  • 1 tbsp prepared horseradish
  • 2 drops tabasco sauce

Cooking Instructions

Steam the spinach leaves by placing in a steamer basket with 1-1/2 inches of water under basket [see below]. Steam for 1 to 2 minutes, just until the leaves are barely limp. Set aside. In a medium bowl, cream the cheese until fluffy. Add remaining ingredients. Divide mixture among the leaves, placing mixture in center. Fold over the sides of the leaves to make a roll enclosing the filling. Chill and serve.
