Especially good with a roast of pork or with grilled pork chops.
Cook the beets and slip the skins off, as above. Either dice, slice, or leave whole, and transfer to a saucepan with the butter. Add the sugar, salt, and nutmeg, and heat the beets through. Shake the pan to season evenly. Add the sour cream and just heat through again; do not let the cream come to a boil and "break." Pour into a serving dish and garnish with chopped parsley.
