Ingredients

  • 3/4 cup butter, softened
  • 1 cup vegetable oil
  • 1 cup confectioners' sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons lemon extract
  • 4 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup white sugar for decoration

Cooking Instructions

Preheat the oven to 375 degrees F (190 degrees C). Sift together the flour, cream of tartar, baking soda and salt; set aside.

In a large bowl, cream together the butter, oil, confectioners' sugar and white sugar until well blended. Stir in the eggs, vanilla and lemon extracts. Gradually mix in the dry ingredients until well blended. Roll the dough into walnut sized balls. Place the cookies 2 inches apart onto the cookie sheet. Flatten cookies to 1/8 inch thickness using the bottom of a glass dipped in sugar. Colored sugar may be used if you do not plan to frost cookies later.

Bake for 9 to 12 minutes in the preheated oven, or until the edges are golden brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

These were a lot of fun!

Also quick & easy! When pressing the balls with the glass bottom I used 1 tsp. of cinnamon to 1/4 cup sugar which added some color & extra taste. Also, when pressing, I let the dough seep past the glass bottom a little which shaped the cookies into round stars.

Great recipe!

I have always shied away from making a sugar cookie because I didn't want to hassle with rolling out the dough and cutting out various shapes. When I read this recipe and saw that you could roll the dough into balls and flatten with a glass I decided to try it. Not only was it just like my mother's tasted, but they were easy to do and everyone loved them. I would highly recommend this recipe.

They are pretty soft, but the dough was rather sticky and therefore hard to cut into shapes. After I had put them in the oven for 5 minutes, I took a cookie cutter and lined it with food coloring so that the shape would appear in the cookie. Then I put them back in the oven for the remaining 5 minutes. The taste is so-so, but it may have just been my baking.

just made them

they are soft. made them today, added fresh lemon zest. easy and tasty.
