Bake cake as directed, using 3 eggs and water as per recipe.
Bake in 2 layers, split each layer in two (4 layers- a good quality mix).
Prepare pudding as directed. Spread on each layer, stack, and cover top.
Whip the cream until peaks form. Frost sides and a ring around the top (which may be piped). Leave the top-center bare. Fill the center with cherry pie filling.
I had this "pie" many years ago at a small lunch counter in a building where I worked. The owner-cook had a lifetime of restaurant and catering businesses. This "pie" was the best ever! It was originated by French Chef M. Sanzian.
