Ingredients

  • 1 set brains, washed and medulla (connecting part in center) removed (about 3/4 pound)
  • 1/2 cup water
  • 2 tbsp Sherry vinegar
  • Browned Butter Sauce for serving (optional)

Cooking Instructions

1 Place brains, rounded side up, in a 2-quart souffle dish. Combine water and vinegar and pour over brains. Cover tightly with microwave plastic wrap. Cook at 100% for 4 minutes.

2 Without removing dish from oven, uncover and turn brains over. Recover and cook for 4 minutes more.

3 Remove from oven. Uncover, drain, and serve hot with Browned Butter Sauce, if desired.
