Saute the chicken in the olive oil until light brown on all sides. Remove and set aside. Add the onion and garlic, and cook briefly. Add the remaining ingredients, blend well, and bring to a boil. Return the chicken to the pan, cover, and simmer for 30 to 40 minutes. Adjust seasoning with salt and pepper, and serve with rice pilaf or orzo (a small pasta in the shape of rice).
